Wild West Grub Slingers opens for diners in Rigby

RIGBY– There’s a new restaurant in town.
The Rigby Chamber of Commerce held a ribbon-cutting ceremony for Wild West Grub Slingers on Monday, Jan. 4, to officially open the family restaurant.
Wild West Grub Slingers is at 432 Farnsworth Way in Rigby, the former location of Gator Jacks.
“The old restaurant was completely gutted, including the kitchen, and redone,” restaurant owner Windy Clark said.
The interior features different Western-themed rooms like a saloon with a self-playing piano and a little frontier town.
The establishment serves wild west food created by executive Chef Ed Hurst. The menu includes burgers, chili, fried chicken and more. The restaurant also offers a gourmet grilled cheese sandwich made with cheese from local establishment Manwaring Cheese.
“We are trying to involve local businesses like Manwaring Cheese to provide something different and fun,” Clark said.
Each meal at Wild West Grub Slingers also comes with free Southwest ranch popcorn and either JELL-O or bread pudding for dessert.
Clark and her husband, Levi, are from Rigby and wanted to bring a fun family restaurant with good food without having to drive far.
