Del Taco hosts grand opening in Rexburg
Published at | Updated atREXBURG — Upper Valley residents can get a different take on southwest cuisine at the new Del Taco restaurant in Rexburg.
The restaurant, located at 568 North 2nd East in Rexburg, hosted its grand opening Wednesday and owners say they’re excited to be serving locals.
The fast-food chain first opened in Yermo, California in the 1960s and began serving with a menu of 19 cent tacos, tostadas, fries, and 24 cent cheeseburgers. Prices aren’t quite that low today, but the restaurant still boasts affordable prices and fresh food.
“I think it’s a concept and a price point that will do well especially with BYU-Idaho and everything else,” Northwest Development Company owner Travis Stroud says.

Stroud was instrumental in Rexburg acquiring the new Del Taco location. The shell of the building was prepared for new owners after the previous KFC restaurant experienced fire damage.
Stroud says he feels the Del Taco may perform better than the previous restaurant.
“To me, Del Taco, it’s the fresh ingredients they use. Their price point is affordable,” Stroud says.
Stroud says California students attending school in the area have thanked owners for bringing the Del Taco as they’re familiar with the brand.
The new restaurant is open everyday from 6 a.m. to 11 p.m.
