During the after-holiday rush, it is often difficult to find time to fix a meal, let alone a dinner that is special enough for guests, but my honey soy pork roast is not only succulent and delicious it is so simple to make.
I love the flavors of this dish so much, I’ll often make a double recipe and save one roast for use in other dishes like tacos, hash, or pot pies. The slow cooker makes the meat so tender and the honey soy glaze is perfect for serving over rice or potatoes.
You can even put this all together the night before and then let it marinate in the fridge. In the morning, place it in the slow cooker and by the time you’re ready for dinner, you have a meal that is guest worthy!
