New food truck in Idaho Falls offering customers a taste of authentic Thai food

THAIDAHO is the name of a new Thai food truck that opened in the parking lot of Ski’s House of Guns at 2627 West Broadway in Idaho Falls on Nov. 20.
Don and Veraporn Higbee are the owners and Don says the response to the restaurant’s cuisine has been very positive.
“The reviews online have been good. We’ve been pretty steady,” he says.
The restaurant offers “a taste of Siam oriental” with an authentic Thai menu of 19 different dishes, such as Thai fried rice, Pad Thai with noodles, shrimp and vegetables and fried calamari (squid) strips.
One of the food truck’s most popular dishes is the spicy basil kaprow, which includes rice, fresh vegetables with your choice of chicken, pork, beef or tofu seasoned with Thai basil.
Veraporn is originally from Thailand and was inspired to open the food truck after working at a Thai restaurant in Jackson several years ago. The two met at the restaurant and have now been married for four years.
The items on the menu are Veraporn’s own recipes that she grew up making in Thailand, Don says.
“She’s an excellent cook,” says Don. “It’s awesome food.”
There are several other Thai restaurants in eastern Idaho, but Don says THAIDAHO is the only Thai food truck in Idaho Falls.
The food truck’s been operating three days a week since it opened. Now that all the kinks have been worked out, Don says it will be open Wednesday through Sunday starting next week.
The Higbees say they’d eventually like to open a storefront once the COVID-19 pandemic goes away.
“These days with the limitations on seating, we thought it was a better choice to do a food truck,” Don says.
The couple is grateful for the support from the community and they’re inviting you to come and give the food a try.
“It’s real Thai food and it’s fresh. People really like it,” Don says.
