Dive into tasty, finger-licking food at Rose Marie’s Gluten Free food truck

IDAHO FALLS — Rose Marie’s Gluten Free, a local specialty food truck, has been cooking up gourmet hamburgers, chicken strips, chicken parmesan sandwiches, chicken cordon bleu, chili cheese nachos, mozzarella sticks, onion rings, funnel cakes, and more for two and a half years in Idaho Falls.

The food truck’s owner and founder, Rose Marie Longacre, said she and her daughter have been gluten-free for more than a decade, but the area offered limited options for people with gluten- or dairy-free dietary restrictions.

“We love fried food, and you cannot get that when you’re gluten-free,” she said.

Longacre, who had previous experience working in restaurants, determined to create her own recipes that would be safe and delicious for individuals who can’t eat gluten to enjoy.

When she first started in July 2022, Longacre said one customer, who’d been gluten-free for decades, literally started dancing for joy.

“When I opened, she’s dancing in the parking lot because she hadn’t had onion rings in 40 years,” Longacre said.

Rose Marie’s customers frequently remark how much better her food tastes than normal, gluten-free food options.

Her motto—emblazoned in yellow outside the food truck—proudly proclaims, “You won’t believe it’s gluten-free.”

Guacamole bacon burger

Rose Marie’s most popular menu item is her Guacamole Bacon Burger—a mouth-watering quarter-pounder topped with thick slices of bacon, guacamole, tomato, lettuce, onion, and pickles on a toasted, gluten-free bun with garlic butter sauce.

“That’s our biggest seller,” Longacre said.

The food truck also offers numerous other gourmet burger varieties – including cheeseburgers; bacon cheeseburgers; Western burgers – featuring cheese, onion rings, bacon and BBQ sauce; Mushroom Swiss burgers; and the “Na Cho” burger – a taco seasoned patty with guacamole, pico, sour cream, lettuce, sliced olives, nacho cheese and chips.

Crispy chicken breast

For crispy chicken breast lovers, Rose Marie’s serves up gourmet chicken sandwiches; chicken parmesan dripping with mozzarella cheese and marinara sauce; chicken guacamole sandwiches; and chicken cordon bleu featuring crispy chicken breast, Swiss cheese, ham and a Dijon cream sauce.

The food truck offers also corn dogs, “hand-battered onion rings, mozzarella sticks and fried pickles” to warm you up on an autumn afternoon or evening.

Famous funnel cakes

Rose Marie’s is also famous for its delicious funnel cakes – piled high with strawberries, raspberries, “apple pie,” “peach pie,” whipped cream, chocolate or white chocolate syrup, cinnamon sugar, cheesecake filling or salted caramel.

“A lot of people come in here just for our funnel cakes,” Longacre said.

They also offer cupcakes, cookies, brownies and a variety of sodas, chocolate milk, iced tea, lemonade, coffee or hot cocoa.

Located at the Yellowstone Food Village next to the Idaho Innovation Center at 2288 North Yellowstone Highway, Rose Marie’s is a family-run establishment run by Longacre and her children.

As one of the few gluten-free establishments in the area, the stand has gathered a wide following — with more than 1,000 followers on Facebook.

Longacre also provides dairy-free chicken strips, chicken sandwich, hamburger, onion rings, fried pickles, fries and funnel cake upon request.

For the first time ever, Rose Marie’s is planning to offer gluten-free lunches and dinner all winter long. The Yellowstone Food Village also features four other vendors – including La Carreta, Thai Food Plus, Tortas Lokas and Diaz Cafe.

To help customers during the colder, winter months, you can call your order in ahead of time at 208-757-3996 or order online here. You can pick up your meal or have it delivered. The food truck also plans to add DoorDash as an option for in-home delivery.

Hours are limited to meal times during fall and winter. You can stop by her food truck from 11:30 a.m. to 2 p.m. on Monday and Wednesday through Saturday. The truck is open for dinner from 5 to 7 p.m. on Wed. and Thurs.; 5 to 8 p.m. on Fridays and 5 to 7:30 p.m. on Saturdays. (The truck is closed on Tuesdays and Sundays.)

Rose Marie’s also caters for weddings and other special events.

For the holidays, they offer more than 12 varieties of gourmet, gluten-free cake you can order in advance — including Devil’s Advocate, Burnin’ Luv, Creme De Carrot, Strawberries and Cream Delight, Razzle Dazzle, Peanut Butter Addiction, Lemon Bubble, Deutsche Schokolade, Cookie Crumble, Caramel Apple and more. Orders can also be placed for plain, oreo, chocolate, grasshopper or fruit-topped cheesecakes; apple, pumpkin, cherry and banana cream pies; rolls — including cinnamon rolls and pumpkin rolls; green bean casserole, stuffing, gravy, cookies and cupcakes.
