Lil’ Mike’s Bar-B-Que offers mouthwatering meats with a new in-store ice cream shop

RIGBY — Lil’ Mike’s Bar-B-Que has been serving up fall-off-the-bone ribs, melt-in-your-mouth brisket, juicy smoked turkey, made-from-scratch sides and other delicious foods for nine years in Rigby.

Now the popular eatery is expanding with a new ice cream shop called Sweet Swirls located inside the restaurant.

“My 10-year-old daughter Harper wanted to make some money and she said, ‘Let’s open an ice cream shop.’ My mom has always wanted to open an ice cream shop and (we) cleaned out the storage room and opened a little ice cream shop in there,” says Lil’ Mike’s Owner Jennifer Scarbrough.

Ice cream cups and cones are offered with a variety of toppings and if you love milkshakes, you have to stop in. We tried a strawberry cheesecake shake complete with strawberry drizzle. So delicious and so filling!

The sweet treats complement the mouthwatering meat Lil’ Mikes has been serving for the past decade. The two-meat plate is a popular choice where you can choose between brisket, pulled pork, turkey, sausage and pork ribs. Sides include coleslaw, corn salad, beans, mac and cheese, salad or corn bread.

“Our most popular item is the loaded baked potato and you can top that with any meat of your choice. Most people do pork or brisket,” Scarbrough says.

We know from firsthand experience that the potato is amazing – and so are the BBQ nachos topped with queso cheese, sour cream, green onion, jalapenos, and beans.

The Lil’ Mike sandwich is also a fan favorite – it has pulled pork, sausage and slaw on a bun – but if you’re really hungry, go for the Big Mike – brisket, sausage and slaw. Guaranteed you won’t leave hungry after devouring the big one!

Scarbrough assures customers the restaurant is generous with portion sizes and you’re guaranteed meat that has been prepared for hours.

“We season our ribs, let them cook a couple hours, take them off, sauce them and then cook them more,” Scarbrough says, noting the entire process takes 3-4 hours.

Because Lil’ Mikes is so popular, and the food takes time to prepare, once the meat is gone for the day, it’s gone so get there early if you want to experience a full menu of yummy options.

“We’re awesome and we don’t skimp on anything. You definitely will go home full,” Scarbrough says.
