Zesty, fresh and easy cilantro lime chicken tacos

Enjoy fresh and zesty cilantro lime chicken tacos! This quick and easy recipe is perfect for busy weeknights. Loaded with flavor and simple ingredients, it’s a surefire hit for any dinner table.

Ingredients

  • 16 oz fresh salsa
  • 1 package low sodium taco seasoning
  • 1 1/2 limes
  • 1-3 tbsp fresh cilantro
  • 3 chicken breasts

Toppings

  • fresh pico de gallo
  • chopped lettuce
  • shredded queso fresco cheese

Instructions

  1. Trim your chicken and place the breasts on the bottom of your crock pot. Add the taco seasoning, salsa, cilantro, and lime juice.
  2. Cover the pot and cook for 3-4 hours on High or 5-6 hours on Low.
  3. About an hour into cooking, mix everything together. Cover and finish cooking until the chicken reads 165 degrees F and is no longer pink in the middle.
  4. Shred the chicken. This can be done with forks, or you can take a hand mixer and mix your chicken until shredded. Stir everything together and serve.
  5. Spread meat in a tortilla. Top with some shredded lettuce, fresh pico de gallo, and some freshly shredded queso fresco cheese.
