East Fork Mink Creek Nordic Center now open for season

The following is a news release from the city of Pocatello.

POCATELLO – The East Fork Mink Creek Nordic Center will be opening for the 2017-18 season Friday, Dec. 15.

“Right now, the racecourse and the trails up to Ermine are in good shape,” said Lance Clark, Outdoor Recreation Program Manager. “With the snow we’ve received, there are no set classic tracks, just corduroy.”

New for the season is a series of classes including the early season backcountry refresher on Jan. 12, women’s beginner classic and skate lessons on January 13, and women’s intermediate classic and skate lessons on January 20.

College of Eastern Idaho selects inaugural president

The following is a news release from the College of Eastern Idaho.

IDAHO FALLS – After a four-month search process, the College of Eastern Idaho’s Presidential Search Committee has selected Rick Aman, Ph.D. as the inaugural president. This marks a truly significant milestone in the history of CEI.

According to Stephanie Mickelsen, the chair of the Presidential Search Committee, the search process was rigorous. She noted Dr. Aman was selected on the basis of his passion for the mission of community colleges and his vision for the College of Eastern Idaho.

Park Price, Chair of the Board of Trustees, said the trustees were impressed with the qualifications of the final candidates and noted that the comments of the search committee as well as the comments received during the public forums were helpful to the trustees in making the final selection.

“The College of Eastern Idaho has a bright future. In the unanimous opinion of the Trustees, Dr. Aman is the right person to lead the institution and we are fortunate he has enthusiastically accepted the challenge,” Price stated in a news release.

Rick Aman, Ph.D., has been the interim president of the College of Eastern Idaho. Previously, he was the president of Eastern Idaho Technical College.

New Maverik opening in Rigby soon

RIGBY – Construction on the Maverik store in Rigby is winding down. The store will open to the public in January.

The opening of the new store comes with mixed feelings for people living in Rigby after the Maverik corporation bought the property formerly occupied by Abbott’s Craft & Variety store. Abbott’s had been a staple in Rigby for many years.

Dave Swager, the Rigby clerk/treasurer tells us the Maverik corporation first proposed the idea to Planning and Zoning.

“They went through a checklist of materials. I’m not sure what that checklist included. They met the requirements, so planning and zoning gave them the go ahead,” Swager says. “There was no reason to stop them from doing that.”

We have reached out to Steve Abbott, the former owner of Abbott’s for comment. We have not yet received a response.

Meanwhile, Troy Jorgensen, the Director of construction for the new store says the 4,300 square foot building was developed specifically for Rigby.

“It’s the first of its kind to open (in Rigby). It’s a much better store than we had there. It’s somewhat similar to the one you see in St. Anthony, although it’s a little larger,” Jorgensen tells EastIdahoNews.com.

Maverik stores nationwide are changing to make room for larger crowds inside, more parking spaces and easier in and out access at the fuel stations.

Swager says the new store, economically, will be a trade off with Abbott’s.

“I think it will be a trade-off for employment. The loss of Abbott’s employees will be offset by the Maverik employees.”

The open house for the Rigby Maverik is scheduled for January 10.

SMALL BUSINESS SPOTLIGHT: Baked

REXBURG – For customers, Danny Noall’s cookies are not only a delicious treat, but also an act of philanthropy.

Noall is one of the co-owners of Baked, a new cookie shop in Rexburg that opened in November. They bake and deliver fresh-baked cookies to their customers with one unique twist — $1 from every cookie purchased is donated to a charity that impacts a child’s life.

“If I got into this just to make money, I think it would become really mundane and monotonous for me,” Noall tells EastIdahoNews.com. “We want to help out those less fortunate than we have been.”
